When we think of Saint Patrick’s Day we often think of Corned Beef & Cabbage, but did you know that the traditional meal in Ireland is Boiled Bacon?
First generation Irish immigrants to the United States weren’t able to afford the high price of pork, so they opted for the cheapest cut of meat available: beef brisket. Corned Beef isn’t cured with corn, that is just a reference to the size of the salt crystals used to cure the beef. The cabbage was also one of the most affordable vegetables at the time, thus creating the meal we much enjoy today. Add a little Soda Bread and some Green Beer and enjoy your dinner!
